What’s your go-to comfort food?

I remember that Saturday afternoon—a moment wrapped in the warmth of simplicity and the joy of good company. After a grueling work week, I wanted something that felt like a hug for the soul. I decided to make my favorite prawn linguine, a dish that somehow felt both indulgent and nourishing.

I had a few dear friends over, and we were all craving a meal that was comforting yet a bit fancy—something to lift our spirits and mark the end of a challenging week. We gathered around the table, glasses clinking and laughter filling the air, as I served up the prawn linguine. The first bite was a symphony of flavors—the delicate prawns, the tangy lemon, and the creamy Parmesan created a beautiful harmony that made everyone’s eyes light up.

And then there was the Tropical Fruit Salad—bright, fresh, and bursting with surprising flavors. The sweet and tangy fruit combined with the crunch of almonds and the hint of lime brought a burst of happiness to the table, making every bite a little celebration of its own. That meal didn’t just satisfy our hunger; it became a cherished memory.

The joy of sharing delicious food with friends, the comfort of a well-loved recipe, and the spontaneous laughter made it an afternoon to remember. It’s moments like these, filled with connection and joy, that turn this prawn linguine into a treasured recipe in my kitchen, one that I return to whenever I need a taste of home and a reminder of the simple pleasures in life.

Why We Loved Prawn Linguine?

Prawn linguine or spaghetti is my ultimate comfort food, blending simplicity with sophistication. The combination of lemon, garlic, cherry tomatoes, and Parmesan cheese creates a dish that is both delightful and health-conscious. Adding kale, spinach, and basil enhances the meal with extra crunch and vibrant flavors, making it a balanced and satisfying choice.

Aroma, Texture, Taste Profile, and Health Benefits

Aroma: As the prawns sauté in olive oil with minced garlic, they release a rich, savory aroma that’s perfectly complemented by the fresh herbs like parsley or basil. The zesty lemon zest adds a refreshing citrus fragrance, enhancing the overall scent of the dish and mingling beautifully with the seafood.

Texture: The prawns are cooked to tender perfection, offering a succulent bite. The linguine, prepared al dente, provides a satisfying chew. The addition of kale or spinach adds a slightly crunchy texture, while the cherry tomatoes burst with juicy sweetness. Optional pine nuts contribute an extra layer of crunch and texture.

Taste: The prawns deliver a delicate seafood flavor that is both sweet and briny. Garlic and lemon zest provide a vibrant tang, while the cherry tomatoes add a pop of natural sweetness. The Parmesan cheese adds a creamy, umami depth, balancing the flavors and enhancing the dish’s overall taste profile. Choosing high-quality Parmesan over processed cheese adds a richer, more authentic flavor and provides more nutritional benefits.

Healthy: This dish is not only delicious but also nutritious. The prawns are an excellent source of lean protein and omega-3 fatty acids, which are beneficial for heart health. Fresh herbs and lemon provide antioxidants and vitamins, enhancing the dish’s nutritional profile. Kale and spinach are rich in vitamins A and C, iron, and fiber, contributing to overall health and digestive well-being. Using Parmesan cheese offers a healthier option compared to processed cheeses, as it contains less sodium and fewer additives while still providing a satisfying, creamy taste.

My Personal Recipe

Ingredients:

  • 250g linguine or spaghetti: Opt for whole-grain pasta for added fiber and nutrients.
  • 200g prawns, deveined and shelled: Fresh or frozen, ensuring they are thoroughly thawed and patted dry.
  • 3 cloves garlic, minced: For an intense, fresh garlic flavor.
  • 200g cherry tomatoes, halved: Choose ripe tomatoes for the best sweetness and juiciness.
  • 1 or 2 lemons, zested and juiced: Adjust for the desired brightness and zesty aroma.
  • Fresh parsley, chopped: For a burst of freshness and color.
  • 1 cup mixed spinach, kale, and fresh basil leaves: Adds depth of flavor and a pleasing variety of textures.
  • 1/4 cup extra virgin olive oil: Enhances the richness.
  • Grated Parmesan or Pecorino Romano cheese: High-quality hard cheese for a pronounced flavor and better nutritional profile.
  • Salt and pepper to taste: Adjust seasoning to your preference.

Instructions:

  1. Cook the Pasta: Boil a large pot of salted water. Add the linguine or spaghetti and cook until al dente. Reserve about a cup of pasta water before draining.
  2. Prepare the Prawns: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant. Add a sprig of rosemary for extra aroma if desired. Season prawns with salt, black pepper, a squeeze of lemon juice, and a pinch of chili flakes. Cook until pink and opaque, about 2-3 minutes per side.
  3. Add Tomatoes and Herbs: Toss in halved cherry tomatoes and cook for 2-3 minutes, letting them soften and release their juices. Add lemon zest and juice, stirring well. Add spinach or kale and fresh basil, cooking until wilted.
  4. Combine: Add the cooked pasta to the skillet, tossing to combine. If the mixture seems dry, add reserved pasta water or deglaze with white wine. Adjust seasoning with salt and pepper.
  5. Serve: Plate the pasta and top with grated Parmesan or Pecorino Romano cheese, hand-pounded or finely chopped parsley, and a few basil leaves for freshness and garnishing. Serve immediately.

Try these variations, if you prefer:

  • Color: Incorporate sun-dried tomatoes along with cherry tomatoes for added visual appeal and a deeper flavor.
  • Texture: Toast pine nuts in a dry pan until golden for added crunch, or omit if you prefer a nut-free dish.
  • Taste: Add a splash of white wine while cooking the prawns for extra depth of flavor.
  • Aroma and Flavor: Finish with a drizzle of truffle oil to enhance the dish’s aroma and add a luxurious touch.

Sides:

Garlic Bread: Serve with freshly baked garlic bread to soak up the flavorful sauce. Enhance the dish with grated Parmesan cheese for added richness and flavor depth. Garnish with extra fresh herbs or a drizzle of quality extra virgin olive oil just before serving to elevate the dish’s presentation and taste.

Why I Love It: This salad is a refreshing complement to the pasta, offering a medley of tropical flavors and textures. It’s a light, nutritious option that balances the richness of the pasta dish.

  • 1/4 cup almond shavings
  • 2 tablespoons fresh basil, finely chopped
  • 2 tablespoons crumbled feta cheese (optional): Adds a tangy, creamy element if desired.

Citrus Vinaigrette:

  • 2 tablespoons fresh lime juice and zest
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Dijon mustard
  • Red or white wine vinegar.

Instructions:

  1. Prepare the Ingredients: Dice tropical fruits into uniform pieces for consistent texture. Wash and dry the mixed lettuce leaves thoroughly.

  3. Assemble the Salad: Lightly toss the lettuce leaves with a small amount of vinaigrette to coat them evenly. This prevents wilting and maintains crispness.
  4. Add Crunch and Flavor: Arrange the diced fruits on top of the lettuce. Sprinkle almond shavings and crumbled feta (if using). Garnish with fresh basil.
  5. Final Touches: Drizzle with additional citrus vinaigrette just before serving to keep flavors fresh.

Best Wine Pairing:

  • Pinot Grigio: Light and crisp, it complements the delicate flavors of the seafood and the herbaceous notes in the dish. The citrusy undertones of Pinot Grigio enhance the lemon zest and tomatoes.
  • Riesling: Its natural sweetness and high acidity balance the garlic and lemon zest, making each bite more flavorful. Riesling’s fruity notes pair well with the prawns, enhancing the overall experience.
  • Viognier: Offers floral and stone fruit notes that match beautifully with the prawns and fresh tomatoes. This wine brings out the dish’s natural flavors, making each bite even more delightful.
  • Sémillon: With its subtle minerality and citrus notes, Sémillon complements the seafood and fresh herbs perfectly. The crisp finish enhances the prawn linguine’s complexity.
  • Chardonnay: A lightly oaked Chardonnay adds a creamy texture that pairs well with the Parmesan and garlic. The buttery finish elevates the richness of the dish without overpowering it.
